I cant believe all the good reviews on this. I bought it based on the reviews and dont get it. This thing is junk. Ok, it sharpens slightly better than dull, but thats it. It also leaves a really rough chewed up edge. I tried it on thin kitchen knives, a pocket knife and a hunting knife. Same results, junk!

Anyone who doesn't rate this a 4 or 5 doesn't understand fine cutlery
Some of the few negative reviews of this product seem to complain that their knife doesn't hold an edge beyond a few uses. Well, to keep the razor sharp edge that this product puts on a piece of high quality cutlery will require frequent sharpening. Ever seen a barber who has to use the razor strop every time he gives a shave - same principle. If you're using cheap knives, then don't expect this to be a miracle worker. You need high quality carbon steel to take the proper edge. Used on the right kind of knife, I can skin a tomato with the edge this leaves behind!

I've used professional powered sharpeners with a three stage process that can't put a better edge than this little hand held device. I keep one in my tool box, one in the kitchen and one in my tackle box. We give them at Christmas as presents and get rave reviews from the recipients. You might get the same finish with a stone and an hours worth of work but why would you?

Be careful not to cut yourself SHARP
I have owned two of these. The first lasted over ten years and still sharpened great. I'm not sure what people are doing wrong, but this knife sharpener works great and lasts a long time.

I am a Chef 22 years now and i use Gustav Emil Ern chefs knives manufactured in Solingen, Germany. Highest grade stainless steel with a Rockwell rating of 52-54, guarantee a superior and longer lasting cutting edge together with high corrosion resistance.

Others use Victorinox Knives
Finest quality Swiss professional chefs knives from Victorinox. Over 100 years of experience has resulted in this superb range of knives.

Forget about Shogun and Global Japanese knives the handle at the start of the blade in Global`s really hurt your hand after use. Shogun`s are cheap crap and are dangerous because the blade bends and they are easy to lose control of.

Forget TV knife sets also, i have yet to see a decent set.

Gustav`s are expensive but you pay for quality.

Also good knifes not as good as Wusthof Trident and Gustav Emil ern`s. the two best chef kinfes in the world.

Look for FULL TANG knifes that means the blade goes all the way through the handle giving a stronger knife.

Any above should last a lifetime and more if well cared for.

I agree with Arthur... I as well use differen brands for different syle of knives. If he is a Chef (in the sense that where he cooks he is required to supply his own knives) then I would suggest getting him a gift certificate to an online cutlery store ( I included a link to the site I use) this link is to the Wustoff Collection which is what I like for majority of my knives, but Wustoff also makes verying degree's of quality knives. I also use Henkels pro s series. You really don't want to buy a "set" as serious Chefs are very particular about thier knives, and have not seen many that like the same characteristics in all the knives the use. For example. I prefer my Wustoff Culinar in my boning and paring knife, but my Henkel for my Santuko and 8" Chef's . Also combined for a whole set of knives would run ( if buying all high quality) about $800 and up. You are a great girlfriend for wanting to do this, may give you my g/f address, maybe you can talk her into sme great gift ideas for me:)
