Great scraper~
This item is lightweight, easy-to-use, and dish washer safe. Great for moving chopped veggies to pan. I also use it when moving portions of sticky casseroles from baking dish to plate, in conjunction with a metal spatula. Great item!

Robbins Nest

The name for these fried treats, thattai, may have been taken from the Tamil word meaning "flattie" or "pattie." These South Indian treats sometimes are found in shops, but connoisseurs swear by the fresh taste of homemade.

THATTAI

Start to finish: 1 hour

Servings: 8

4 cups rice flour

1/2 cup urad dal flour (or chickpea flour)

2 tablespoons yellow split peas, soaked in hot water for 10 minutes

1 teaspoon cayenne pepper, or to taste

2 teaspoons sesame seeds

10 curry leaves, roughly torn (optional)

Salt, to taste

1/4 cup (1/2 stick) butter, cut into small pieces

1 1/2 cups water

Vegetable or canola oil, for frying

Arrange a large sheet of waxed or parchment paper on the counter near the work area.

In a large bowl, combine both flours, the yellow split peas, cayenne, sesame seeds, curry leaves and salt. Using a pastry cutter or 2 knives, cut in the butter. Add 1/4 cup of the water and begin making a dough.

I've got these 2 very weird rolling pins that were passed down from my grandmother. My mom is senile so I can't ask her and I have no idea what they're for as I've only ever seen regular rolling pins before now. So, one of the is completely made up of small wooden pyramid-like shapes covering the surface. the other one is like a regular rolling pin but with deep grooves going around it. Anyone know what they're for?

I would be willing to bet that they are specialized pins used for making the tops of pies. The one with the triangles, could be used to make a 'lattice' top pie out of 1 solid piece of dough, while the one with the grooves could be used to mark the lines to cut out the more traditional even strips to make the lattice top.

With out a picture, I can't say for sure though.

Are Wooden Rolling pins obsolete?
In this day and age of the fear of cross contamination how does one "clean" (steralize) a wooden rolling pin.
"When cleaning the surface of the pins, do not bathe the pin in great amounts of water, which only serves to add unnecessary moisture to the wood. Instead, use a damp cloth or a dough scraper to remove unwanted materials" is what the experts say, but does that remove all the particulates, i.e. raw egg from the pin? I do have several pins that are not wood but I'm focusing only on that particular tool. Obsolete? or not?

CubCur advised: No Steve, I certainly don't think they're obsolete: I have an arsenal of pins, wood and steel, each chosen as best of breed for a specific job. Similarly, my boards are both wood and marble, depending on the job in hand.

What I do believe should be obsolete are pins with static handles and revolving barrels, of any type of material. Those are genuinely impossible to get properly clean, even if they can be disassembled: too many nooks and crannies.

As for clean down, the dedicated board scraper (it's not used for anything else) for all wooden surfaces after each use during the day and finally, at the day's end, a rub down with a disposable cloth moistened with food service sterilising fluid, which, of course, isn't found living in too many domestic kitchens <g>, so you could replace it with a dilution of 1 part of 3.5% chlorine bleach to 6 parts of water (or 1 part of 5% chlorine bleach to 9 of water), for example. The endless scraping down during the day precludes any build up of things you don't care for, and the scraper, assuming it's a good one, gets more off than any other implement can, and it's as quick as it is thorough.

'Wet' washing is another story altogether: soggy wooden surfaces provide a moist environment for some considerable period of time while drying which does the wood no favours and gives any possible contamination a lovely environment to thrive. Not good on both counts... :-)

(Pet peeve: synthetic pins and rolling boards of any kind, so we won't go there... <gg>)

juano19 advised: Water, flour and salt based? Wrap the rolling pin in a wet towel or cloth and let it sit. Check it from time to time and it will eventually soften enough to wash off. Be careful because too much water too long on a rolling pin could cause it to split.
