Cooking for two? Perfect PETITE gratin dishes...
... purchased two dishes after reading the recommendation in "America's Test Kitchen, Cooking for Two - 2010". My first use was for "Berry Gratin", a recipe for berries with a Zabaglione custard needing to be browned under a broiler. These petite gratins are perfect for small portions needing a wide surface for browning under a broiler.

Just don't cook them as long as you would for mashed and choose a waxy potato.

I am a former chef and any oven ready or proof dish is fine, a square oblong or round Corningware or Pyrex is fine, a deep one about 3-5 inches deep, I alway put mine on a baking sheet lined with foil to catch the drips and clean up easier.

Just make sure to grease the dish well, or you will be soaking it for a few hours, do not cook it to high either 350 d F for 45-60 minutes for fairly thin sliced potatos and if your using a mix, follow the directions it said.

If you using cheese to gratin the top, do it in the last 30 minutes of cooking it will not get lost in the mixture and will not burn either.

I take frozen hash brown plain or O'Brien one ( with red pepper diced up , onion and a jar of Rague cheese sauce. mix well. put in casserole dish or cake pan. Bake at 350* for 45 55 mins opt can top with bread crumble before baking.
